I tried all the new 2004 Bouchard wines about six months ago; the whites looked a lot better than the reds, and this was my first opportunity to revisit an ’04 white.

I gave this 30 minutes in the fridge before opening it, just to bring it to about 15 degrees. A gorgeously pure nose, lemon and oatmeal, with a touch of some granitey goodness. The palate is absolutely beautiful, seamlessly balanced, full and finely structured, lean lemons and hard green fruits, with all these flavours building in the mouth like a crescendo, exploding in a pyrotechnic display. The finish is mealy and minerally, a superb wine, fit and trim, in great shape now but with awesome potential. Don’t serve it too warm, and don’t serve it too cold; serve it just right.
